  4. Add sugar, bring to boil, boil for about 30 minutes, until a spoonful on a cold plate forms a 'skin', about 225°F if you have a candy thermometer.
  5. Carefully pour into sterillised, preheated jars, cover add lids, label, date, allow to cool, enjoy.
