The ingredients needed to make Mexican Rice:
  1. Get 3 cups cooked rice
  2. Get 1 cup boiled rajma/kidney bean
  3. Get 1/2 cup boiled sweet corn
  4. Take 7-8 boneless chicken pieces
  5. Make ready 1/2 cup chopped green capsicum
  6. Make ready 6-7 cloves chopped garlic
  7. Prepare 2 medium size of tomatoes pureed
  8. Make ready 2 medium size of chopped onion
  9. Take 2 slitted fresh chillies
  10. Take 1/2 cup chopped spring onion greens
  11. Make ready 1 tsp chopped tomato
  12. Make ready 1 tsp tomato ketchup
  13. Make ready 1 tsp red chilli sauce
  14. Prepare 1 tsp cumin powder
  15. Make ready 1/2 tsp coriander powder
  16. Get 1 tsp red chilli powder
  17. Get 1/2 tsp black pepper powder
  18. Make ready 1 tsp mixed herbs/oregano
  19. Take to taste Salt
  20. Make ready 1/4 cup warm water
  21. Make ready As required Oil
Instructions to make Mexican Rice:
  1. Heat oil in a pan, add the boneless chicken pieces and fry it for 3-4 mins or until the chicken changes its colour.
  2. Next add the chopped onion, fry it for 2 minutes, add chopped garlic & chopped fresh chillies and fry it for 3-4 mins.
  3. Next add the tomato puree and cook it for another 4-5 mins, lower the flame and add cumin powder, coriander powder, red chilli powder, black pepper powder, mixed herbs & salt to taste and mix everything well for about 2-3 mins.
  4. Next add the boiled rajma & sweet corn, mix it well with the masala, add the tomato ketchup & red chilli sauce, mix it well for 2-3 mins.
  5. Next add little warm water, add the chopped capsicum & tomato, cook it for 2-3 minutes. Add the cooked rice & some chopped spring onion greens.
  6. Gently Mix everything well and it's done.
