  1. Make ready 2 cups Raw rice
  2. Take 1 big lemon size Tamarind
  3. Prepare 50 ml Sesame oil
  4. Make ready As needed Salt
  5. Make ready 1 tbsp Turmeric powder
  6. Prepare Spice powder:
  7. Get 3 tabelspoon Chana dhal
  8. Take 2 tabelspoon Coarinder seeds
  9. Make ready 6 red chilies
  10. Get 2 tabelspoon Sesame seeds
  11. Make ready 1/4 tabelspoon Fenugreek
  12. Get 1 tabelspoon Black pepper
  13. Make ready 4 springs Curry leaves
  14. Make ready For the seasoning
  15. Get 50 ml Gingerly oil
  16. Take 1 tbsp Mustard seeds
  17. Prepare 1 tbsp Urad dal
  18. Take 3 springs Curry leaves
  19. Take 1/4 cup Pre roasted peanuts
  20. Prepare 1 tbsp Sugar
Instructions to make Puliyogare / Puliyoadharai:
  1. Roast all spices one by one seperately without oil using low flame. set aside.
  2. Roast peanuts seperately.set aside.
  3. Grind roasted coarinder seeds,chanadhal,black pepper,red chilies,fenugreek seeds,curry leaves.
  4. Soaked rice. For fluffy rice soak rice 30 mins
  5. Soak tamarind in hot water (around 2 cups) and extract 2 cups of thick juice from it. Discard the pulp.
  6. Heat oil and add the ingredients mentioned under seasoning.
  7. When dal turns golden brown, add the pre roasted peanuts into thick tamarind extract, salt and let it boil on medium flame.
  8. Now add turmeric powder, salt, sugar into the boiling tamarind extract.
  9. Finally add ground spice powder.Switch off when it thickens and oil oozes out.
  10. Mix well with rice.
  11. Serve with appalam or potato chips.
  12. Note - You can add less or more spice powder according to how hot you want the rice to be. Similarly, you can add less or more tamarind paste according to how sour you want the rice to be. Adjust as per your preferences. You can store the paste in the refrigerator for 7-10 days and use it when required.
