Make ready 2 cups Raw rice
Take 1 big lemon size Tamarind
Prepare 50 ml Sesame oil

Prepare Spice powder:
Get 3 tabelspoon Chana dhal
Take 2 tabelspoon Coarinder seeds
Make ready 6 red chilies
Get 2 tabelspoon Sesame seeds
Make ready 1/4 tabelspoon Fenugreek
Get 1 tabelspoon Black pepper
Make ready 4 springs Curry leaves
Make ready For the seasoning
Get 50 ml Gingerly oil
Take 1 tbsp Mustard seeds
Prepare 1 tbsp Urad dal
Take 3 springs Curry leaves
Take 1/4 cup Pre roasted peanuts
Prepare 1 tbsp Sugar
Instructions to make Puliyogare / Puliyoadharai:
Roast all spices one by one seperately without oil using low flame. set aside.
Soak tamarind in hot water (around 2 cups) and extract 2 cups of thick juice from it. Discard the pulp.
Heat oil and add the ingredients mentioned under seasoning.
When dal turns golden brown, add the pre roasted peanuts into thick tamarind extract, salt and let it boil on medium flame.
Now add turmeric powder, salt, sugar into the boiling tamarind extract.
Finally add ground spice powder.Switch off when it thickens and oil oozes out.
Mix well with rice.
Serve with appalam or potato chips.
Note - You can add less or more spice powder according to how hot you want the rice to be. Similarly, you can add less or more tamarind paste according to how sour you want the rice to be. Adjust as per your preferences. You can store the paste in the refrigerator for 7-10 days and use it when required.
