Take a bowl add wheat flour, maida, salt, ajwain, oil, ghee and mix it well.
Now add water step by step and make a semi soft dough and give it rest for 30 minutes.
Take a bowl and add chopped boiled potatoes, peas, salt, black pepper, coriander seeds, coriander leaves, mint leaves, garam masala, chilli ginger, turmeric powder, amchur powder and mix it well.
Now from the dough, roll round shape roti slightly thick and cut it half. Now take one part and add the stuffing and fold it to make triangle shaped samosa.
Now fry all of them and then serve it with green chutney.
