Make ready 750 gm Mutton (prefer shoulder)

Take 2 tbsp Tamarind paste
Make ready 1 cup Thick Coconut milk
Get 1 tsp Zeera whole
Make ready 1 tsp curry masala powder to be grounded
Make ready 100 grms Cashew
Get 50 grms Roasted Peanuts
Prepare 100 grms Roasted chana dal(putane ke dal)
Prepare 50 grms Sesame seeds
Take 2 Cloves
Prepare 1/2 tsp Fennel seeds
Take 3-4 Black pepper
Get 1" Cinnamon stick
Make ready 4-5 Star anise
Take 3 Red chillies dry
Make ready 1/2 tsp Dry ginger
Steps to make Kaari Chawal:
First make the Kaari masala.
Dry roast all the whole spices. Roast the peanuts, sesame seeds and chana dal too
In a mixer all all the Curry masala ingridents and grind to a fine powder
Take the mutton pcs add the ginger garlic paste salt and pepper, onion and tomatoes and other dry spices and boil the mutton till 6 vessels
Take oil in a big pot and add the zeera
Add the red chilli powder
Add 250 grms of the Curry masala prepared
Fry the masala till it turns golden and nice aromas spreads
In the masala add the mutton stock along with the pcs
Add 2 tbsp tamarind paste
Add coconut milk
Let the curry simmer for 30 to 45 mins
Enjoy the Kaari with khamiri roti and rice
