  2. Combine the heavy cream, milk and sugar, and heat. Don't let it come to the boil.
  3. Dissolve the gelatin over a double boiler, and add to the mixture from Step 2. Mix well.
  4. Add the rum.
  5. When it has cooled so it is warm to the touch, pour it into glasses containing the lychee, and leave it in the fridge for 1-2 hours to finish!
