Make ready 1 cup wheat flour
Get 1 cup maida / All-purpose flour
Prepare 1 tbsp oil for moyan

Get 1 capsicum finely chopped
Get 100 gm paneer chopped in a small pieces

Take 1 tbsp ginger garlic chilli paste
Make ready 2 tbsp oil
Get 1 tsp red chilli Sauce
Take 1 tbsp tomato sauce
Prepare 1 cup tomato puree
Get 1 tsp turmeric powder
Take 1 tsp red chilli powder
Make ready to taste Salt
Prepare 25 gm butter almost
Take 2 tbsp shechwan chutney
Prepare 2 tbsp Chopped coriander for garnishing
Steps to make Veg Kathi Rolls:
Take both type of flour in a utensil,add oil,kasuri methi,salt, water and knead it well.
Give it rest for 15 minutes at least to develop gluten. Grease your hand with some oil n knead it again
Make 12 equal portion of it.
On the other side take oil in a pan on flame. Add ginger garlic chilli paste and saute it for 2 minutes. Add tomato puree and saute it.
Then add masalas…like salt,turmeric and red chilli powder….in it and stir well. Also add onion, cabbage,capsicum and saute it.Cook it well.Add paneer pieces also..
Now add red chilli sauce n green chilli sauce and stir the mixture.Also add tomato sauce &chopped coriander. Mix well n switch off the gas.
Now take one portion of the dough and roll it like thin chapati with the help of pin & ataman.Grease it with oil.
Then fold it as shown in the picture. Do same with all the portion (lua)
Again roll it…like chapati.Then roast the chapati on both the sides by greasing butter.
Make all the chapatis as shown in the picture. Then take one of it and spread some sechzwan chutney on it.Stuff the filling as shown in the pic..Sprinkle some cheese.
Then Roll it tightly and poke toothpick on it.Make all the Kathi rolls with the same procedure. Garnish it with Cheese,chopped tomatoes & Coriander leaves.Kathi Rolls aur ready to serve….
