The ingredients needed to make Pumpkin soup:
  1. Take 300 g yellow/orange pumpkin chopped
  2. Take 1 carrot chopped
  3. Get 1 Tomato chopped
  4. Get 2 tsp butter
  5. Take 2-3 cloves garlic finely chopped

  7. Get to taste Black pepper powder
  8. Make ready 1 Tbsp chopped coriander

  1. Heat 1tsp butter in a pan and add chopped garlic. Saute till nearly burnt and golden brown. Transfer to a bowl.
  2. In a pressure cooker heat 1 tsp of butter and saute pumpkin and carrots till slightly brown. Add tomatoes and little water. Pressure cook to 2 whistles. Cool and blend in a blender.
  3. Transfer the paste to a saucepan and add 3 cups of water. Add salt and pepper and cook for few minutes.
  4. Add burnt garlic and cook for another 2 minutes. Serve garnished with coriander and lemon juice. Goes well with toasted bread.
