The ingredients needed to make Adai:
Make ready For dosa batter-
Prepare 1 1/2 cup idli rice
Make ready 1/2 cup raw rice
Take 1/2 cup toor dal
Make ready 1/2 cup chanadal
Get 2 tbsp urad dhal
Prepare 1 tbsp moong dhal
Get 7 red chillies
Make ready as per taste Salt
Get as required Water
Get as required Sesame Oil
Prepare For tempering-
Make ready 2 Onions
Take Few curry leaves
Prepare Few coriander leaves
Get 1 tsp Cumin seeds
Steps to make Adai:
Soak the rice and all the dals mentioned above for 2-3 hours with required water.
After 3 hours in a blender add the red chillies and soaked rice and dals and grind it into a slightly coarse batter. Grind it in two batches. The batter should be a little thick and not runny as regular dosa batter.
Finely chop the onions, curry leaves and the coriander leaves.
Add the chopped veggies to the batter and also add the roasted cumin seeds to the batter.
Heat a dosa tawa on high flame, when it's hot start making adai. Sprinkle sesame oil around and over adai for good taste and flavour. This makes your adai crispy and flavourful. Flip the adai and cook it on both the sides.
Serve hot, crispy adai with coconut chutney or jaggery. In some hotels, they are served with Aviyal also.

Notes:1) Don't soak the rice and dals more than 3 hours.it will result in a very smooth batter.
2)Don't blend the batter into a smooth paste then it will taste like a dal dosa only not like adai.
3)you can fry the cumin seeds,onion and curry leaves in 2 tsp of oil and add it to the batter.
