To get started with this particular recipe, we have to first prepare a few components. You can have gioulbasi using 10 ingredients and 5 steps. Here is how you cook it.

The ingredients needed to make Gioulbasi:
  1. Get lamb cut into medium sized cubes
  2. Get stewing beef cut into medium sized cubes
  3. Prepare pork (front leg/shoulder) cut into medium sized cubes
  4. Prepare ripened medium size tomatoes
  5. Take medium size green peppers
  6. Prepare greek kefalotyri or pecorino romano cheese in cubes
  7. Get wine
  8. Get chopped garlic cloves
  9. Get salt, pepper, oregano
  10. Prepare olive oil
Instructions to make Gioulbasi:
  1. Wash the meat and dry it with a paper towel. In a big bowl place the meat and rub it with salt, pepper, oregano and the chopped garlic.
  2. Wash the tomatoes and peppers and cut them in thin rounds (as you do for a pizza).
  3. Place half the meat quantity in a casserole dish and add in between the meat pieces, half the pecorino cubes.
  4. Lay on top of the meat, half of the cut peppers and then half of the tomato rounds.  On top of the tomatoes, add the remaining meat, cheese, peppers and tomatoes in this order (as we did above).
  5. Drizzle with the wine and olive oil and cook in a pre-heated oven in 200 deg C, for about 2 hours.
