The ingredients needed to make Amla Rice:
  1. Get 3 cup Cooked rice
  2. Get 8 big Indian Gooseberry
  3. Take to taste Salt
  4. Take Pinch Turmeric Powder
  5. Prepare 3 Green Chillies
  6. Take Handful Fresh Coriander chopped
  7. Prepare 1/2 inch Ginger chopped
  8. Make ready Pinch Roasted Fenugreek Powder
  9. Take 1 tbsp Ghee
  10. Make ready 3 tbsp Peanuts
  11. Take 1 tsp chana dal
  12. Prepare 1 tsp urad dal
  13. Make ready 1 tsp Mustard Seeds
  14. Get 1/2 tsp Cumin Seeds
  15. Get 1/4 tsp Asafoetida
  16. Make ready 2 Dried Red Chillies Whole
  17. Take 10 Curry Leaves
  18. Make ready 4 tbsp Cooking oil
Steps to make Amla Rice:
  1. Wash amla and chop into small pieces,discard the seeds.
  2. In a mixer jar and add chopped green chilies, ginger, amla and fresh coriander and grind to make a paste.
  3. Add 1-2 tsp water if having difficulty in grinding.
  4. Heat oil in a wide pan and add peanuts and fry for few seconds til it start to crackle.
  5. Add urad daal, chana daal and stir for few seconds.
  6. Then add cumin, mustard seed,dried red chili, asafoetida and curry leaves and saute.
  7. When the cumin and the lentils become golden red in colour then add the amla paste in the pan and saute for 2 minutes on medium heat.
  8. Now add turmeric powder,the cooked rice, salt, roasted fenugreek powder and mix gently..
  9. Cook till the rice become hot and steaming
  10. Add 1 tbsp of ghee before switching off the heat.
  11. Serve amla rice with boondi raita or buttermilk.
