First, heat a pan or wok. Add 2 tablespoons of the oil. When oil heats up, add mustard seeds and let them crackle. Then add cumin, methi, saunf, kalonji and hing. Let them crackle and sauté for 1 minute on low flame.
Then add finely chopped carrots and sauté on high heat for a minute. Then add finely chopped beetroot and again sauté on high heat for a minute.
Add salt and finely chopped amala pieces and sauté further for 1 minute.
Now add all the spices and jaggery and again sauté for a minute on high heat. Then switch off the flame.
Then add White vinegar and mix well gently. Then heat a small tempering pan. Add the rest of the oil.
Then add 1 pinch each of hing, chili powder, and turmeric powder to the oil. Let it cool. Then mix in with the pickle.
