  1. Cut the chicken into bite sized pieces and add marinade ingredients to a zip lock bag. Leave to marinate for at least 1 hour.
  2. In a mixing bowl add beaten egg and plenty of cornflour. Coat chicken pieces - make sure well covered and dry. - - Heat vegetable oil in deep frying pan or wok. Deep fry the chicken pieces until cooked through and golden and keep aside.
  3. Mix the sauce ingredients (other than the chillies/spring onions) in a jug.
  4. Pour off all but 2 teaspoons of oil from the pan/wok. Put the chicken pieces into the wok and fry and heat with the chillies/spring onion.
  5. When nice and hot, pour the sauce over chicken. The sauce will boil and thicken to coat the chicken.
  6. Serve with stir fried rice. Enjoy!
